A reason to get out of bed – healthy and delicious banana pancakes
Picture this: it’s the weekend. You wake up in your dreamy, soft, cosy & comfy (Rise & Fall-sheeted) bed. You realise that you have nothing you need to do, nowhere you have to be.
Do you get up? Truth be told, we probably wouldn’t; not straight away anyway.
And whilst we are all for a lie-in every now and then, we also know that (however tempting it may be), staying in bed and snoozing the morning (or day) away isn’t necessarily beneficial for your sleep-health. (You can find out more about this sad news here).
So, before the restful relaxation becomes sneaky snoozing, get up & go. We know it can be tough, so here is some motivation:
Requirements: blender, non-stick frying pan
1 medium sized banana
1.5 dl oats
Pinch of salt
Optional: ground turmeric for health, ground cinnamon to taste
Put banana, oats, egg, salt, (and turmeric & cinnamon) in the blender. Blend until smooth. Consistency should be similar to yoghurt. Add water if it needs thinning, add more oats if it’s too runny.
Heat frying pan to medium heat. Put dollops of mixture in frying pan and let settle. You will find that they, as if by magic, become fluffy and round pancakes. Flip after roughly 60 seconds. Let fry for further 90 seconds. Done!
Serve with a topping of your choice: berries, fruit, lemon juice & honey – really whatever you fancy! (We always add turmeric to make the pancakes healthy, then sometimes offset with bacon and maple syrup…)
